VEGAN BANANA NUT LOAF.


Doesn't everyone just love a banana bread. They're sooo easy to make, honestly I think you could throw anything into the mix and it'd turn out delish. This is the recipe I use EVERYTIME, adding different spices and additions depending on what I have in my cupboard and the method couldn't be simpler. Just add to a blender and mix. I find it best to stir through the optional extras by hand so that they stay chunky.
Add to a blender

225g Plain Flour

3 heaped tsp Baking Powder

2 heaped tsp ginger and cinnamon

100g Brown/White Sugar (Brown sugar will make it richer in taste)

3 large Black Bananas

75g Vegetable/Coconut Oil

Optional; 50g Chopped Walnuts, Sultanas, Chocolate Chips, Caramelised Ginger, extra slices of Banana.

Method

Blend until smooth and then remove the blade.

Add your nuts/chocolate chips/fruit to the bowl and mix well with a spoon.

Pour into greaseproof paper lined 2lb loaf tin and bake for around 30 minutes at 200 degrees celsius, covering with foil if it starts to burn on top.

This is definitely more of a bread texture than a cake, make it even more delicious by spreading it with some butter, nut butter or jam. I love having this toasted with dairy free butter for a treat at breakfast time
