I wanted to share some cuuuute cookies I made recently following this recipe. Love Me Feed Me is a website I've recently stumbled across and I want to make EVERYTHING.
I love vegan baking because it's sooo much more fun and interesting than your average egg, butter, sugar recipes. I did add more flour and sugar to this one to make it more of a dough and it turned out really well! Much better than the vegan ginger nuts I once made, that my boyfriend coined sausage roll biscuits, since they were so oily! For ease, I opted for regular sugar and water icing with a dash of pink food colouring, but I really want to get on the aquafaba band wagon. Time to add an electric whisk to my ever growing kitchen appliance collection!
It was the perfect opportunity to use this beautiful copper cutter I've had for ages, which can be found here. I can tell these are going to be a staple in my house, they taste uhhh-mazing!
